Healthy St. Patrick’s Day Eats & Drinks

Happy St. Patrick’s Day, Everyone!

For one day, everybody is Irish — thanks to the global drawing power of Guinness and green beer and shirts that say, “Kiss Me, I’m Irish for 24 Hours.” It’s one big party, but it doesn’t have to leave you feeling a bit off tomorrow.

We found some healthy twists on traditional festive Irish eats and drinks — so you can have some some fun and stay spry as a leprechaun.

Bell Pepper and Potato Frittata —

This yummy dish — from Kingwood RVT Sarah Wilson’s fave blog — Skinnytaste — takes on instant Irish flair with the addition of four-leaf clover shaped bell peppers.

And lucky for you, this is a snap to make.

Healthy Irish Stew — Cooking Light

It wouldn’t be St. Patty’s without Guinness Irish Stew. This version from Cooking Light has a delicious, healthy version that keeps all the delicious fun in and unhealthy fats out.

Healthy Irish Soda Bread

We like how this recipe adds vein-friendly ingredients like cinnamon, nutmeg, and currants!

Healthy Shamrock Shake — from Peanut Butter and Peppers

This recipe grabbed us at Girl Scout Thin Mint cookie!

We found it on the blog — Peanut Butter and Peppers — and we like how it incorporates healthy greek yogurt, unsweetened coconut milk and a banana to boost the healthiness factor.

This is what the fit leprachauns drink!

Spearmint Vodka Cooler

We love mint for lots of reasons, especially how it’s loaded with cardiovascular boosting vitamin C and carotenes. So we give this low-cal, St. Patty’s Day toddy a thumbs up!

May the luck of the Irish be with you all day today!
